Perfect No-Bake Chocolate Oatmeal Cookies

My secret to making a perfect no-bake, top of the stove cookie is the timing.

Ready for it?  Boil for exactly one minute. 

Don't second guess yourself. Start the timer the moment the mixture reaches a full boil, then take it off the heat in exactly sixty seconds. When you stir in the remaining ingredients, stir until well combined, then go ahead and drop the cookies on the waxed paper. The cookies will cool to the perfect consistency, not too soft and not too hard and crumbly.

Here's the recipe. When I was growing up we called these Mammaw's Carolina Delight.

Perfect No-Bake Chocolate Oatmeal Cookies 

2 cups sugar
1/4 cup Hershey's cocoa
1/2 cup milk
1 stick butter or margarine
1 tsp. vanilla
pinch of salt
1/2 cup peanut butter
3 cups quick-cooking oatmeal

In a 3-quart pan, mix sugar, cocoa, milk, margarine. Put on medium heat and cook until mixture comes to a full boil, then boil for one minute. Remove from heat. Add the vanilla, salt, peanut butter, and oats. Stir well. Drop by teaspoonfuls on waxed paper. Cool at room temperature. 
Serve and enjoy. (Makes about 30 cookies.)

A lot of people make this recipe, but my Mammaw made it best. I remember HUGE cookies, and plenty of them! I remember my Mammaw's smile as she watched us enjoy these, washing them down with a nice glass of milk. Mammaw's been gone for a long time, but I think of her every time I make these wonderful chocolate treats for my family. My boys love them. Even my husband enjoys them and he's not the biggest chocolate fan in the house (that would be me!).
