5 Minute Cream Cheese Corn
When I'm in the mood for a creamy, cheesy side dish I usually use this crockpot creamy corn recipe.
But sometimes I'm in a hurry.
So, for a quick, sweet, cheesy side dish, I use this microwave recipe that's ready in 5 minutes, start to finish.
It helps to start with good-quality corn, so go for the name brand if you have a choice. Personally, I use Schwan's frozen vegetables because they're the best I've ever tasted or prepared. Their cut corn is exceptional. Check the link if you aren't familiar with Schwan's or need to arrange for delivery.
Here's my quick and easy microwave recipe:
5-Minute Cream Cheese Corn
To serve two:
1 1/3 cups frozen cut corn (2 servings size)
2 Tablespoons (1 ounce) cream cheese
1 Tablespoon butter
To serve four:
about 3 cups frozen cut corn
4 Tablespoons (2 ounces) cream cheese
2 Tablespoons butter
Pour corn into a microwave-safe pan. Add cream cheese and butter.
Cover and cook in the microwave for 4 to 5 minutes on 100% power.
Remove from microwave and stir well.
Note: Adding a tablespoon or two of milk with the cream cheese and butter will make the result creamier and easier to stir together.
The instructions on the bag of corn call for a longer cooking time, but I find that 4 minutes for two servings works well in my microwave oven. Your results may vary, so feel free to adjust the cooking time as necessary.
