Twice-Baked Sweet Potatoes Recipe

Yum
Enjoy this twice-baked sweet potatoes recipe. Delicious alone or served with a lean, boneless pork chop and green beans.
Don't forget to pin this recipe. It's a keeper!
I love browsing the cookbooks section in the Kindle store. In fact, I'm so crazy about cookbooks for Kindle, I wrote this article on the topic. Recently, during my daily browsing sessions, I found a book called 30 Delicious Sweet Potato Recipes by Pamela Kazmierczak. Since our family really loves sweet potatoes (even Daisy enjoys them), I downloaded the book and started bookmarking recipes. Last night, I tried the twice-baked sweet potatoes. Wow, they were so good!

It's a simple recipe. Just bake three or four sweet potatoes, scoop out the insides, then use a hand mixer to combine with the following:
3 Tbsp brown sugar
4 ounces cream cheese
1/2 tsp cinnamon
1 tsp salt (I used 1/2 tsp)
1/2 tsp black pepper

Mix well, then scoop back into the potato skins and bake for 15 minutes at 375 degrees.

Delicious! I could make a meal out of these and, in fact, I probably will. (I baked extra so we'd have leftovers.)

I was lucky to find the cookbook when it was free, but it's well worth the low, regular price and I would definitely recommend you check it out.

If you enjoy collecting cookbooks to read on your Kindle (or use one of Amazon's free reading apps on another device), then you might want to bookmark my Cookbooks for Kindle article where I feature free cookbooks several times a week along with other bestsellers and bargain books.

Have you found a Kindle cookbook that you really enjoy? I'd love to read your recommendations in a comment below.
