It's a simple recipe. Just bake three or four sweet potatoes, scoop out the insides, then use a hand mixer to combine with the following:
3 Tbsp brown sugar
4 ounces cream cheese
1/2 tsp cinnamon
1 tsp salt (I used 1/2 tsp)
1/2 tsp black pepper
Mix well, then scoop back into the potato skins and bake for 15 minutes at 375 degrees.
Delicious! I could make a meal out of these and, in fact, I probably will. (I baked extra so we'd have leftovers.)
I was lucky to find the cookbook when it was free, but it's well worth the low, regular price and I would definitely recommend you check it out.
