Have you seen the Fajita Chicken Bake recipe that's so popular right now on Pinterest? If not, I'd guess that you're in the minority; this beautiful, delicious, and easy chicken recipe has been pinned by thousands (536k and counting).

When I first saw the original pin, I made immediate plans to give the recipe a try. Last night was the night.

As usual, I made some minor changes to the recipe. First, I used three peppers (stoplight peppers in red, yellow, and green) instead of two, which worked out just fine.

I rarely have taco seasoning on hand so I used chili powder and cumin instead, but I didn't use enough. Next time I'll use more to start with, but a few shakes of my favorite Mrs. Dash Fiesta Lime seasoning added at the table made up the difference.

I used a good 1/2 cup of cheese, as called for in the recipe, but we didn't think it really needed the cheese so next time I'll just leave that off and perhaps add a dollop of sour cream to each serving as I dish it out. I did serve the baked fajita mixture over a bed of rice as the original poster suggested, which was delicious and filled us right up.

Verdict? We loved this Easy Fajita Chicken Bake Recipe and I can't wait to make it again. Fortunately we had leftovers, so I won't have to wait long to have another taste.

  1. This looks so good, and easy too. It will definitely be going on my must try list! Just need some fresh peppers. It's good to have your suggestions too. I might hold off on the cheese too.

    1. Hope you do try it, Merry. For us, the cheese adds more fat and the peppers provide plenty of flavor. You could always add it at the table, too, if you find your taste buds are missing it. I'd love to know how you like it and if you make any changes. Thanks for commenting!
