Love veggie pizza? I do, too. I've been hungry for something different and I had a jar of artichoke hearts in the pantry, so I decided to invent a veggie pizza with a bit of a twist - I decided to make it white. So I bought some packaged pizza crust, a jar of Alfredo sauce, and a zucchini to add to the artichoke and here's what I came up with.
A to Z Artichoke Zucchini White Pizza
(Serves 2 to 3)
1 purchased pizza crust
extra virgin olive oil
1 small zucchini, thinly sliced
1/4 cup chopped red onion
1 clove garlic, minced
1 small jar marinated artichoke hearts, drained and roughly chopped into bite-size pieces
1/4 cup sliced black olives
half of a 15-ounce jar purchased Alfredo sauce
1 cup mozzarella cheese
grated Parmesan cheese
Preheat oven to 425 degrees. Place pizza crust on pizza pan. Heat a drizzle of olive oil in iron skillet or saute pan. Add sliced zucchini, the chopped onion, and the garlic; saute for about 5 minutes or until just barely soft. Meanwhile, spread a thin layer of Alfredo sauce on pizza crust. Top with mozzarella cheese, then the sauteed onion, garlic, zucchini mixture. Arrange artichoke hearts and olives on top then shake on a generous amount of Parmesan cheese. Place in oven and bake for 8 to 12 minutes until cheeses are melted and crust is brown. Remove from oven, brush edge of hot pizza crust with olive oil. Slice and serve.
My homemade-up pizza recipe's a keeper! We really liked it and I'm glad the pizza crust came two to a package because I'm looking forward to fixing it again. As always, substitute to please your own tastes. I hadn't planned on the black olives, but my husband suggested we add those and they worked well even though my "white pizza" wasn't quite as white.
