Easy Last-Minute Christmas Cookies

Need a couple dozen Christmas cookies in a hurry?  Here's a quick and easy recipe - and you might already have the ingredients on hand!

Easy Last-Minute Christmas Cookies

1 box white cake mix
2 large eggs
1/3 cup cooking oil
1 tub white frosting (or make your own if you have time)
Christmas-colored sprinkles

Preheat oven to 350 degrees.  In a large bowl, combine the dry cake mix, eggs, and oil.  Mix well with a mixer or by hand (I just use a wooden spoon and mix them up by hand).  

Use a teaspoon to scoop out dough, enough to roll between your palms into a ball about 3/4 to 1 inch in diameter.  Arrange balls of dough on an ungreased cookie sheet, a couple inches apart.  Bake for about 8 to 10 minutes. Take them out when they're still soft.  The cookies will rise, tops will crack, then they'll fall slightly.  (If they don't fall, next time take them out a bit sooner - they taste better when they're soft.)  Cool completely.

Frost cookie tops then sprinkle immediately with the colored sprinkles. 

Makes 24-36 cookies depending on size.

Variations:  You can use just about any flavor of cake mix for these cake mix cookies. Feel free to stir in chocolate chips or nuts or raisins to complement the cake flavor.  Use frosting or skip it, it's up to you.  For more flavor combinations and pictures, visit this page.
