Looking for a simple recipe for pie crust? If you're afraid to make a pie crust from scratch, stop worrying and, instead, try this one:
My Recipe for Pie Crust
2 cups sifted all purpose flour
1 tsp salt
3/4 cup shortening
4 to 5 Tbsp ice water
Wax paper and freezer wrap (Tip: Make one for now and freeze one for later)
Place the flour and salt in a large mixing bowl. Cut in the shortening with a pastry blender until mixture become crumbly. Add ice water, 1 T at a time. After each addition, toss with a fork. Push moistened ingredients to the side so that you just add the ice water to the dry ingredients. Continue adding the ice water 1 T at a time until all the dry ingredients are moistened. Dough should be just moist enough to hold together, not sticky.
Divide dough in half and roll each half into a ball. To save until later, wrap each ball with wax paper then wrap tightly in freezer wrap and freeze for up to 2 months. When ready to use bring to room temperature and roll out as desired.
This is a great pie crust to have ready and waiting in the freezer for the next time you want a wonderful, fresh, homemade from scratch pie. It's much cheaper than buying frozen pie crusts from the grocery store, too. Try it and let me know how you like it!
