Potato candy is something I don't make very often, but my boys love it when I do. One son requested it some time back, so I might just have to make a batch to take to him on our next visit to his house.
Stephen's Potato Candy
1 small potato
1 pound confectioners sugar (approx.)
peanut butter
Cook the unpeeled potato until tender. Peel then mash the potato in a large bowl. Mix the sugar into the potato. Keep adding sugar until the mixture is well blended and forms a ball. Sprinkle a long sheet of waxed paper with confectioners sugar. Sprinkle the ball of candy with confectioners sugar then use a rolling pin to roll the candy into a rectangle. Spread the rectangle with peanut butter then roll up like a jelly roll. Chill, then cut into slices and store in an airtight container, or leave in a roll and slice as you go.
A little potato goes a long way in this recipe. It tastes a lot better than it may sound. Give it a try and let me know how you like it!
