Like to save money? Frugality begins in the kitchen and, with that in mind, I recently purchased a great course called "Supermarket Savings 101" which contained an e-cookbook called "Simply Centsible Suppers." That cookbook included a couple of extra recipes that aren't necessarily for supper, but they're quick, easy, and inexpensive to prepare. In fact, as I type this I have a batch of Banana Chocolate Chip Muffins in the oven, the last recipe in this wonderful little cookbook. This recipe has become a favorite, so I thought I'd share it here with you.
Banana Chocolate Chip Muffins
Makes 12 muffins
1 1/2 cups flour
1 cup sugar
1 tsp each baking soda and salt (I use just a pinch of salt)
1 egg
1/2 cup Miracle Whip
3 ripe bananas, mashed (2 large bananas work fine)
1 cup chocolate chips
Mix flour, sugar, baking soda, and salt in a large bowl. Beat egg in small bowl. Stir in Miracle Whip. Add to flour mixture. Stir just until moistened. Stir in bananas. Spoon into greased or paper-lined muffin tins. Sprinkle with chocolate chips. Bake at 375 degrees for 20-25 minutes or until lightly browned.
This is a great recipe for me because I usually have everything on hand. Chocolate chips are certainly optional, but if you've never tried chocolate with bananas you're missing a great treat. Fix these for breakfast or for snacks. Then fix some more 'cause everyone's going to love them!
