Favorite Oatmeal Cookies
1/2 cup margarine or butter (1 stick), softened
1 egg
1 cup all-purpose flour
1/2 cup sugar
1/2 cup packed brown sugar
1 tsp vanilla
1/2 tsp baking soda
1 cup quick-cooking rolled oats
1 cup raisins or chocolate chips or craisins or other dried fruit
Preheat oven to 375 degrees. Put softened butter in a large bowl. Using mixer, beat for about 30 seconds. Add the egg, flour, sugar, brown sugar, vanilla, and baking soda to the margarine. Beat on medium speed about 2 minutes or until well mixed, scraping sides of the bowl as needed. Stir in oats and raisins, chocolate chips, or dried fruit (or a combination) with a wooden spoon. Use two teaspoons to drop the cookie dough 2 inches apart onto ungreased cookie sheets. Bake 8 to 10 minutes or until brown. Makes about 40 small cookies. (I make mine a bit bigger and get 24 to 30, baking about 12 minutes.)
