Mammaw's Carolina Delight

My secret to success with this no-bake, top of the stove cookie recipe is the margarine. I use Fleischmann's. Works perfectly every time.

2 cups sugar
1/4 cup Hershey's cocoa
1/2 cup milk
1 stick margarine
1 tsp. vanilla
pinch of salt
1/2 cup peanut butter
3 cups quick-cooking oatmeal

In a 3-quart pan, mix sugar, cocoa, milk, margarine. Put on medium heat and cook until mixture starts to boil, then boil for one minute. Remove from heat. Add the vanilla, salt, peanut butter, and oats. Stir well. Drop by teaspoonfuls on waxed paper. Cool at room temperature. Serve and enjoy.

A lot of people make this recipe, but my Mammaw made it best. I remember HUGE cookies, and plenty of them! I remember my Mammaw's smile as she watched us enjoy these, washing them down with a nice glass of milk. Mammaw's been gone for a long time, but I think of her every time I make these wonderful chocolate treats for my family. My boys love them. Even my husband enjoys them and he's not the biggest chocolate fan in the house (that would be me!).
