Lily's Easy Greek Fish Fillets

1 pound blue hake fish fillets or other firm white fish, about four pieces, partially thawed
1 to 2 tablespoons Athenos Greek with Feta Cheese salad dressing (one good squirt right out of the bottle)

Squirt the salad dressing into a 10 inch sauté pan. Begin heating over medium heat. Add the fish fillets, turning to coat the fish and spread the dressing around in the pan. Sauté for about three minutes then carefully turn, further coating the fish. Continue cooking for another three to five minutes, depending on the thickness of the fish, until fish flakes easily with a fork. Serve with a lemon wedge.

This recipe is fast and simple – only two ingredients – yet so clever and oh, so tasty! It's my favorite way to fix fish. I get the blue hake from Schwan’s. Do you ever see those big yellow trucks with the blue swan on the side that bring ice cream and other frozen goodies directly to you? They have great products (try their frozen vegetables – they’re second to none!). I order online at and my order is delivered to my door every other Monday. Now that’s how I like to shop!

Athenos is a Kraft company and I find this wonderful salad dressing, one of our favorites, on the shelf next to the Kraft dressings. The seasoning is just perfect with the fish and you don’t need to add anything else. If you can’t find this brand, certainly another oil-based dressing would work, so choose your favorite and sauté away! Remember that fish is good for you and you should try to serve it at least weekly.
